Ham And Rice Stir-Fry
- 1 bag Success rice
- 1 c. sliced green onions
- 1 c. thinly sliced celery
- 2 Tbsp. cooking oil
- 4 oz. can mushroom pieces and stems, drained
- 1 c. frozen peas
- 1/4 c. sliced ripe olives
- 6 3/4 oz. can Hormel chunk ham, flaked with fork
- 2 large eggs, beaten
- 1 Tbsp. soy sauce
- Cook Success rice according to package directions; drain and set aside.
- Saute onions and celery in oil until tender-crisp. Add mushrooms, peas, olives and Hormel chunk ham; cook 3 to 4 minutes.
- Push mixture aside in pan and scramble eggs.
- Add rice and soy sauce.
- Toss lightly with ham and rice mixture until completely heated.
- Garnish with mandarin orange slices and celery leaves, if desired.
- Makes 4 to 6 servings.
