Festive Cake
- 1 c. all-purpose flour
- 2 c. sugar
- 1 tsp. baking soda
- 1 tsp. salt
- 1 Tbsp. cinnamon
- 1 c. chopped almonds
- 3 eggs
- 1 1/2 c. vegetable oil
- 1 tsp. almond extract
- 2 c. chopped firm ripe bananas
- 1 (8 oz.) can crushed pineapple
- 1 (8 oz.) pkg. cream cheese
- 1/2 c. butter
- 1 lb. powdered sugar
- 1 Tbsp. instant chocolate
- Mix and sift flour, sugar, baking soda, salt and cinnamon. Stir in almonds.
- Beat eggs slightly and combine with oil, almond extract, bananas and undrained pineapple.
- Add to dry ingredients. Mix thoroughly but do not beat.
- Spoon into well-oiled 10-inch tube pan.
- Bake at 325u0b0 for 1 hour and 20 to 25 minutes.
- Remove from oven and let stand 10 to 15 minutes.
- Remove from pan.
