Shrimp Gumbo

  1. Fry diced bacon until crisp; remove from pot.
  2. Drain off fat. Add onions and celery to remaining grease; fry until golden brown. Add tomatoes, catsup, garlic, bell pepper, okra, sauces and bay leaves.
  3. Bring to a boil.
  4. Add 1 pint boiling water; let cook slowly for an hour or more.
  5. Add 2 tablespoons flour thickening; let simmer for a few minutes.
  6. About 25 minutes before serving, add shrimp, salt and pepper.
  7. Just before serving, add crisp bacon.
  8. Serve with plain boiled rice.
