Banana Yogurt Muffins
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup sugar
- 1 cup mashed ripe banana
- 3/4 cup plain nonfat yogurt
- 1/4 cup vegetable oil
- 1 egg, lightly beaten
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened shredded coconut, lightly toasted
- Vegetable cooking spray
- Combine first 5 ingredients in a medium bowl; make a well in center of mixture. Combine banana, yogurt, oil, egg, and vanilla; stir well. Add coconut; stir just until blended. Add banana mixture to dry ingredients, stirring just until dry ingredients are moistened.
- Spoon batter into muffin pans coated with cooking spray, filling two-thirds full. Bake at 400u0b0 for 20 minutes or until muffins are golden. Let cool on a wire rack 5 minutes, and remove from pans.
