Spaghetti De Siciliano
- 4 to 5 Tbsp. olive oil
- 1 medium onion, diced
- 1 green pepper, julienned
- 2 cloves garlic, minced
- 1 eggplant, peeled and diced
- 1 large can whole tomatoes, drained
- 1 can flat anchovy fillets, shredded
- 1/2 c. black olives, sliced
- 8 oz. box fresh mushrooms, sliced
- 1 Tbsp. capers
- 1 tsp. basil
- 1 Tbsp. parsley
- red pepper flakes
- 1 pkg. spaghetti, cooked and tossed with melted butter
- 2 Tbsp. Parmesan cheese
- Saute medium onion in olive oil over medium heat for 10 minutes.
- Add green pepper, eggplant, garlic and mushrooms and saute for 15 more minutes.tdd tomatoes and basil.
- Cover and simmer
- for
- 30
- minutes.
- Add
- anchovies,tlives, capers and parsley
- and
- cook 10 minutes more.
- Serve over hot spaghetti. Time

- preparation: Pre-prep: 20 minutes.
- Cooking time: 60 minutes.
- Serves 6 to 8.
