Weight Watchers Stir-Fried Cabbage
- 1 Tbsp. plus 1 tsp. reduced calorie margarine (tub)
- 2/3 c. diagonally sliced celery
- 2 c. shredded green cabbage
- 1/2 c. chopped red or green bell pepper
- 1/3 c. chopped onion
- 1 Tbsp. plus 1 tsp. soy sauce
- pepper to taste
- In 10-inch nonstick skillet, heat margarine over high until bubbly and hot.
- Add celery and cook, stirring quickly and frequently, for 1 minute. Add cabbage, bell pepper and onion; continue to stir-fry until vegetables are tender-crisp, 2 to 3 minutes. Add soy sauce and pepper.
- Stir well. Cook for 1 minute longer.
- Makes 4 servings.
- Each serving provides 1 3/4 vegetable exchange, 1/2 fat exchange.
- Per serving contains 40 calories, 1 g protein, 2 g fat, 5 g carbohydrate, 33 mg calcium, 508 mg sodium and 0 mg cholesterol.
