High-Rise Apple Pancake
- 1/4 c. margarine
- 6 c. peeled apple slices
- 1/4 c. sugar
- 1/2 tsp. cinnamon
- 2 eggs, slightly beaten
- 1/2 c. flour
- 1/2 c. milk
- 1/4 tsp. salt
- 1 Tbsp. margarine
- strawberry preserves
- Melt margarine in a large skillet over low heat.
- Add combined apples, sugar and cinnamon.
- Cook until apples are tender. Combine eggs, flour, milk and salt; heat until smooth.
- Heat oven-proof 8-inch skillet or pan in a 450u0b0 oven until very hot. Coat skillet with margarine; immediately pour in butter.
- Bake on lowest rack at 450u0b0 for 10 minutes.
- Reduce heat to 350u0b0; continue baking 10 minutes more or until golden.
- Fill with apple mixture; top with preserves.
- Serve immediately.
- Serves 4 to 6.
