Cola Cake
- 2 c. granulated sugar
- 2 c. all-purpose flour
- 1 1/2 c. miniature marshmallows
- 1/2 c. butter
- 1/2 c. vegetable oil
- 3 Tbsp. cocoa
- 1 c. Coca-Cola
- 1/2 c. buttermilk
- 1 tsp. vanilla extract
- 2 eggs
- 1 tsp. baking soda
- 1/2 c. butter
- 3 Tbsp. cocoa
- 6 Tbsp. Coca-Cola
- 1 (16 oz.) box confectioners sugar
- 1 c. chopped pecans
- 1 tsp. vanilla extract
- Preheat oven to 350u0b0.
- In a large bowl, sift together sugar and flour.
- Stir in marshmallows; set aside.
- In saucepan, combine butter, oil, cocoa and Coca-Cola; mix well.
- Bring to a boil over medium heat; remove from heat and pour mixture over dry ingredients; blend well.
- Add buttermilk, baking soda, eggs and vanilla, mixing well after each addition.
- Grease a 9 x 13-inch pan with additional butter or Pam.
- Pour batter into pan.
- Bake at 350u0b0 for 45 minutes; remove cake from oven and frost immediately.
