Woodford Pudding
- 3 eggs
- 1 cup sugar, divided
- 1/2 cup butter or margarine, softened
- 1 cup plum jam
- 1/2 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- Dash of ground cloves
- 1 teaspoon baking soda
- 3 tablespoons milk
- Sweetened whipped cream or
- Hard Sauce
- Beat eggs in a medium mixing bowl 5 minutes or until very light and fluffy. Gradually add 1/2 cup sugar, beating well.
- Cream butter in a large mixing bowl; gradually add remaining sugar, beating until light and fluffy. Add egg mixture and jam, beating well. Stir in flour, cinnamon, nutmeg, and cloves.
- Dissolve soda in milk; add to batter, stirring well. Pour batter into a greased 2-quart casserole. Bake at 350u0b0 for 40 minutes or until set. ( Pudding will rise, then fall.) Cut into squares; transfer to a serving plate, and serve warm with sweetened whipped cream or Hard Sauce.
