Shrimp And Yellow Rice
- 1/2 c. chopped onion
- 1 Tbsp. water
- 2 1/4 c. hot water
- 1 1/4 c. uncooked brown rice
- 1/2 medium red pepper, cut in slices
- 1/2 medium green pepper, cut in slices
- 2 tsp. low sodium chicken bouillon granules
- 1 tsp. oregano
- 1/2 tsp. ???
- 1 bay leaf
- 12 oz. small shrimp, shelled and deveined
- 1 medium tomato, chopped
- In a 3-quart casserole, combine onion and 1 tablespoon of water; cover and microwave for 12 minutes on High.
- Add water, rice, both peppers, bouillon and spices.
- Mix. Cover and cook on High for 5 minutes.
- Reduce heat to 50%; cook 40 to 50 minutes. Add shrimp and tomato; mix.
- Cover and cook on Medium for 5 to 8 minutes.
- Let stand 5 minutes.
