Shrimp And Yellow Rice

  1. In a 3-quart casserole, combine onion and 1 tablespoon of water; cover and microwave for 12 minutes on High.
  2. Add water, rice, both peppers, bouillon and spices.
  3. Mix. Cover and cook on High for 5 minutes.
  4. Reduce heat to 50%; cook 40 to 50 minutes. Add shrimp and tomato; mix.
  5. Cover and cook on Medium for 5 to 8 minutes.
  6. Let stand 5 minutes.
