Broccoli And Cheese Pie
- 10 fillo leaves
- 1/4 c. butter (Country Crock)
- 1/2 c. finely chopped onions
- 3 pkg. (30 oz. total) frozen chopped broccoli, thawed and well drained
- 3 eggs or equivalent Egg Beaters
- 1/2 lb. Feta cheese, crumbled
- 1/4 c. chopped parsley
- 2 Tbsp. dill weed
- 1 tsp. salt (can omit)
- 1/2 tsp. pepper
- 1/2 c. melted butter or low-fat substitute
- Preheat oven to 350u0b0.
- Melt butter in skillet and saute onion until golden.
- Add broccoli, beaten eggs and rest of ingredients except fillo.
- Butter the inside of a 9-inch spring-form pan. Place in one fillo leaf and butter it.
- Do the same with four more leaves.
- Dump in the filling.
- Cover the top with the part of the leaves that hang over.
- Cut 5 (9-inch) fillo circles.
- Place one at a time on top, buttering each layer.
- Score the top of the pie. Pour remaining butter over the top.
- Place on a cookie sheet to catch the drippings.
- Bake 40 to 45 minutes or until puffy and golden.
- Makes 8 servings.
