Orange Pumpkin Pie
- 1 unbaked pie crust (9-inch)
- 3 large eggs, beaten slightly
- 1/2 c. sugar
- 2 Tbsp. orange zest, shredded
- 1/2 tsp. cinnamon
- 1/2 tsp. ginger
- 1/2 tsp. salt
- 1 (16 oz.) can pumpkin
- 1 c. light cream
- 1/2 c. orange juice
- 1 can whipped cream
- 2 Tbsp. shredded orange zest
- Preheat oven to 400u0b0.
- In a large bowl, combine eggs, sugar, grated orange zest, spices, salt, pumpkin and orange juice.
- Beat with electric mixer until mixture is smooth (no lumps remaining). Pour into an unbaked pie crust and bake for 55 minutes or until filling is set in center.
- Cool on wire rack.
- Just before serving, circle perimeter with whipped cream, then across the center.
- Garnish with shredded orange zest.
