Cranberry Banana Bread
- 3 eggs
- 3 small or 2 large overripe bananas
- 1 stick butter
- 1 Tbsp. vanilla
- 1/2 c. water
- 1 pkg. yellow cake mix
- 1 (8 oz.) can jellied cranberry sauce
- Do not preheat the oven for this recipe!
- Melt the butter, then combine it with beaten eggs, mashed bananas, vanilla and water in a large mixing bowl.
- Add the cake mix, and beat on medium speed for about 4 minutes.
- Stir in the cranberry sauce, beating to break up large lumps.
- Bake at 350u0b0 in a 10-inch tube pan (40 minutes) or 2 loaf pans (30 minutes).
- You may need to turn the oven to 400u0b0 for the last 10 minutes to brown the bread. Instead of cranberry sauce, you may also add raisins or nuts. This is a moist, delicious bread that is easy to make and tastes even better when refrigerated.
