Microwave Beef Jerky With Fresh Ginger
- 2 tsp. minced fresh ginger
- 2 Tbsp. honey
- 2 tsp. sesame oil
- 2 Tbsp. soy sauce
- 2 Tbsp. dry white wine
- 2 garlic cloves, crushed
- 1 tsp. cayenne pepper
- 1 1/2 lb. flank steak, all fat removed and cut in thin strips
- Combine ginger, honey, sesame oil, soy sauce, wine, garlic and cayenne.
- Add steak to marinade, tossing to coat well.
- Marinate at room temperature, tossing occasionally, for 3 hours.
- Remove meat from marinade and arrange half the strips, flat and close together, on a microwave bacon rack.
- Cover with paper towels and cook on Medium-low 20 minutes.
- Rotate strips so that drier strips are in the center. Cover with fresh paper towel and cook on Medium-low for 15 to 20 minutes until meat is dry but slightly pliable.
- Remove to a large wire rack and let stand overnight. Repeat with remaining strips.
