Radish And Chive Edamame Salad
- 8 cups water
- 1 1/2 cups frozen shelled edamame
- 1 1/2 tablespoons extra-virgin olive oil
- 1 1/2 tablespoons white wine vinegar
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 cup thinly sliced radishes
- 1/4 cup chopped fresh chives
- Bring 8 cups water to a boil in a saucepan. Add edamame; cook 3 minutes or until tender. Drain.
- Combine olive oil, vinegar, Dijon mustard, salt, and pepper in a medium bowl, stirring with a whisk. Stir in edamame, radishes, and chives.
