Stuffed Meat Loaf(Serves 6)
- 1 1/2 lb. lean ground beef
- 1 (2 1/2 oz.) jar sliced mushrooms
- 2/3 c. mushroom liquid and milk
- 1/2 c. dry bread crumbs
- 1 egg
- 2 tsp. salt
- 1/3 tsp. pepper
- 1 1/2 tsp. Worcestershire sauce
- 1 Tbsp. minced onion
- 1 c. shredded Cheddar cheese
- 1/2 c. catsup
- Combine all ingredients except cheese and catsup.
- On a sheet of wax paper, spread mixture in a 9 x 12-inch rectangle, or until meat is about 1/2-inch thick.
- Sprinkle cheese over meat.
- Using the wax paper to start, roll the meat, starting at the smaller end.
- Place seam-side down in 2-quart baking dish on a meat rack (to keep meat out of juices).
- Cook in microwave oven, uncovered, for 14 to 16 minutes on full power; turn once during cooking time. Let stand 10 minutes before serving.
