Stir-Fry Shredded Beef A La Henry
- 14 oz. beef rump steak, shredded
- 2 tsp. oil
- 1 Tbsp. sherry
- 1 tsp. cornstarch
- 1/4 tsp. baking soda
- 1 Tbsp. soy sauce
- 1/2 tsp. sugar
- 6 Tbsp. oil
- 3/4 tsp. salt
- 2 c. shredded onion
- 1 c. shredded green peppers
- ground pepper
- Sprinkle beef with 2 teaspoons oil, sherry, cornstarch, baking soda, soy sauce and sugar.
- Set aside for 30 minutes.
- Heat 3 tablespoons oil in pan and add 3/4 teaspoon salt.
- Stir in onion and stir-fry 2 minutes. Add green peppers and fry for 2 minutes. Remove from pan.
- Heat remaining 3 tablespoons oil in same pan. Add beef.
- Stir-fry until color changes.
- Add a pinch of ground pepper and return vegetables to pan.
- Mix well and stir-fry for 1 minute.
