Spinach And Mozzarella Meat Loaf

  1. Preheat oven to 350u0b0.
  2. In a medium bowl, combine the meat, soup mix, bread crumbs and eggs.
  3. Shape into a 10 x 10-inch square on a sheet of waxed paper.
  4. Combine spinach with cheeses; spread over beef mixture, leaving a 1-inch border.
  5. Roll, jelly roll style, removing waxed paper while rolling.
  6. Seal edge tightly.
  7. In a 13 x 9-inch baking pan, place meat loaf seam side down.
  8. Bake for 1 hour, or until done.
  9. Let stand 10 minutes before serving.
