Spinach And Mozzarella Meat Loaf
- 2 lb. ground beef
- 1 envelope Lipton Recipe Secrets savory herb with garlic soup mix
- 1 1/2 c. fresh bread crumbs
- 2 eggs
- 1 (10 oz.) pkg. frozen whole leaf spinach, thawed and squeezed dry
- 1 c. Mozzarella cheese
- 1/4 c. grated Parmesan cheese
- Preheat oven to 350u0b0.
- In a medium bowl, combine the meat, soup mix, bread crumbs and eggs.
- Shape into a 10 x 10-inch square on a sheet of waxed paper.
- Combine spinach with cheeses; spread over beef mixture, leaving a 1-inch border.
- Roll, jelly roll style, removing waxed paper while rolling.
- Seal edge tightly.
- In a 13 x 9-inch baking pan, place meat loaf seam side down.
- Bake for 1 hour, or until done.
- Let stand 10 minutes before serving.
