Creme De Menthe Squares
- 2 c. all purpose flour
- 2 c. sugar
- 2 tsp. baking soda
- 1 c. butter or margarine
- 1 c. water
- 1/4 c. cocoa
- 2/3 c. buttermilk
- 2 large eggs
- 1 tsp. vanilla
- 1 (1 oz.) sq. unsweetened chocolate, melted
- Combine first 3 ingredients in a large bowl; set aside. Combine butter, water, and cocoa in a saucepan; bring to a boil. Pour mixture over dry ingredients, stirring until blended. Stir in buttermilk, eggs and vanilla. Pour batter into a greased and floured 15x10x1 inch jellyroll pan. Bake at 350u0b0 for 20 minutes or until a wooden pick inserted in center comes out clean. Cool on a wire rack. Spread with Creme De Menthe frosting, refrigerate until frosting is firm. Cut into 1 inch squares and drizzle with chocolate. Yield: 48 squares.
