Marlin Chowder
- 4 onions, chopped
- 4 stalks celery, chopped
- 2 green peppers, seeded and chopped
- 4 cloves garlic, crushed
- 1/4 cup vegetable oil
- 4 (14 1/2-ounce) cans tomatoes, undrained and chopped
- 1 quart water
- 6 potatoes, peeled and cubed
- 1/4 cup Worcestershire sauce
- 3 tablespoons lemon juice
- 2 teaspoons salt
- 1 teaspoon ground cloves
- 1/2 teaspoon ground allspice
- 1/2 teaspoon hot sauce
- 2 pounds marlin fillets, cut into bite-size pieces
- Saute onion, celery, green pepper, and crushed garlic in oil in a large Dutch oven until tender. Add tomatoes; simmer, uncovered, 40 minutes, stirring occasionally.
- Add remaining ingredients, except fish; simmer 1 hour or until potatoes are tender. Add fish; simmer 5 minutes or until fish flakes easily when tested with a fork.
