Sweet Pickle Rings(Red Pickles)
- 1 gal. cucumbers
- 5 qt. water
- 1/2 oz. red food coloring
- 5 c. vinegar
- 9 c. sugar
- 8 sticks cinnamon
- 1 c. pickling lime
- 6 c. vinegar
- 1 Tbsp. powdered alum
- 5 c. water
- 1 pkg. cinnamon red hots
- Peel and core cucumbers (sliced 1/2-inch thick). Scrape out seeds (look like rings).
- Mix solution of pickling lime and 5 quarts water (plus enough to cover cucumbers).
- Let stand 24 hours (time is not critical, can stand longer).
- Stir occasionally with wooden spoon.
- Be sure to use porcelain or glass container to set brine. Drain well.
- Rinse and cover with vinegar, red food coloring, powdered alum and enough water to cover cucumbers.
- Let stand 2 hours or a little longer. Drain and discard solution.
