Hummingbird Cake (Light Version)

  1. Coat three 9-inch round cake pans with cooking spray; sprinkle 2 teaspoons flour in pans and shake to coat.
  2. Set aside.
  3. Combine remaining 3 cups flour, soda, salt, sugar and cinnamon in a large bowl.
  4. Combine eggs, applesauce and oil and add to flour mixture, stirring just until dry ingredients are moistened.
  5. (Do Not Beat). Stir in banana, vanilla and pineapple.
  6. Pour batter into prepared pans.
  7. Bake at 350u0b0 for 23 to 25 minutes or until a wooden pick inserted in center comes out clean.
  8. Cool in pans on wire racks 10 minutes; remove from pans and cool completely on wire racks. Spread Light Cream Cheese Frosting on top and sides of cake.
  9. Store in refrigerator.
