Hummingbird Cake (Light Version)
- Vegetable cooking spray
- 3 cups plus 2 teaspoons all-purpose flour, divided
- 1 tsp. Baking soda
- 1/2 tsp. salt
- 1 3/4 cups sugar
- 1 tsp. Ground cinnamon
- 2 large eggs, lightly beaten
- 1/2 cup unsweetened applesauce
- 3 Tbsp. Vegetable oil
- 1 3/4 cups mashed banana
- 1 1/2 tsp. Vanilla extract
- 1 (8 oz.) can crushed pineapple in juice
- Light Cream Cheese Frosting
- Coat three 9-inch round cake pans with cooking spray; sprinkle 2 teaspoons flour in pans and shake to coat.
- Set aside.
- Combine remaining 3 cups flour, soda, salt, sugar and cinnamon in a large bowl.
- Combine eggs, applesauce and oil and add to flour mixture, stirring just until dry ingredients are moistened.
- (Do Not Beat). Stir in banana, vanilla and pineapple.
- Pour batter into prepared pans.
- Bake at 350u0b0 for 23 to 25 minutes or until a wooden pick inserted in center comes out clean.
- Cool in pans on wire racks 10 minutes; remove from pans and cool completely on wire racks. Spread Light Cream Cheese Frosting on top and sides of cake.
- Store in refrigerator.
