Magnolia House Chicken Breasts
- 2 whole chicken breasts, split, boned and skinned (2 lb.)
- 2 Tbsp. butter
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1/2 lb. fresh mushrooms, sliced
- 2 tsp. fresh lemon juice
- 1/3 c. Madeira, sherry or broth
- 1/2 c. whipping cream
- 1 c. shredded Swiss cheese
- Brown chicken breasts in butter over medium-high heat for 5 minutes.
- Sprinkle with salt and pepper.
- While chicken cooks, marinate mushrooms in lemon juice.
- Add Madeira, sherry or broth to chicken in pan; turn over.
- Simmer another 5 minutes, or until chicken breasts are cooked through (do not overcook).
- Remove to warm platter.
- Turn heat to high; boil liquid mixture down to about 1/4 cup.
- Add mushrooms; saute until mushroom liquids are evaporated.
- Add cream; boil over high heat until sauce is thickened and reduced.
