Magnolia House Chicken Breasts

  1. Brown chicken breasts in butter over medium-high heat for 5 minutes.
  2. Sprinkle with salt and pepper.
  3. While chicken cooks, marinate mushrooms in lemon juice.
  4. Add Madeira, sherry or broth to chicken in pan; turn over.
  5. Simmer another 5 minutes, or until chicken breasts are cooked through (do not overcook).
  6. Remove to warm platter.
  7. Turn heat to high; boil liquid mixture down to about 1/4 cup.
  8. Add mushrooms; saute until mushroom liquids are evaporated.
  9. Add cream; boil over high heat until sauce is thickened and reduced.
