Butterscotch Chip Peanut Butter Cookies

  1. Heat oven to 375u0b0.
  2. In a large bowl, beat the sugar, brown sugar, margarine and peanut butter until light and fluffy.
  3. Add vanilla and egg.
  4. Blend well. Stir in flour, baking soda and salt. Mix well. Stir in butterscotch chips.
  5. Shape dough into 1-inch balls.
  6. Place 2-inches apart on ungreased cookie sheets.
  7. Flatten slightly with fork dipped in flour or sugar.
  8. Bake at 375u0b0 for 6 to 10 minutes or until golden brown.
  9. Immediately remove from cookie sheet.
  10. Cool completely.
  11. Yields 4 to 5 dozen cookies.
