Company Chicken
- 3 whole chicken breasts, split
- salt and pepper
- paprika
- 1/2 c. butter or margarine
- 1/4 tsp. sweet basil
- 1/4 tsp. rosemary
- 1/2 c. chopped onion
- 1 (4 oz.) can sliced mushrooms, drained
- 1/2 c. cooking sherry
- juice of 1/2 lemon
- 1 (10 oz.) can cream of mushroom soup, undiluted
- 3 c. hot cooked rice
- Place chicken, skin side up, in a greased shallow baking dish; sprinkle with salt, pepper and paprika.
- Melt butter in saucepan. Add remaining ingredients except rice.
- Stir until blended.
- Pour over chicken.
- Bake at 350u0b0 for 1 hour and 15 minutes.
- When ready to serve, remove chicken from baking dish.
- Serve gravy over rice and place chicken breast on mound of rice.
- Yield:
- 6 servings.
