King Ranch Chicken

  1. Boil until tender, 1 large hen or fryer, debone chicken and save broth.
  2. Simmer in skillet with 3 tablespoons salad oil, chopped onion and green pepper; add can of Ro-Tel (tomatoes and chilies), chili powder, cumin, oregano and salt and pepper to taste.
  3. Separately mix together cream of chicken soup, mushroom soup and broth; add this to the sauce and mix well.
