King Ranch Chicken
- 1 deboned chicken
- 3 Tbsp. salad oil
- 1 chopped onion
- 1 green bell pepper, chopped
- 1 can Ro-Tel chili-tomatoes
- 1 tsp. chili powder
- 1 tsp. cumin
- 1 tsp. oregano
- salt and pepper to taste
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 c. chicken broth
- corn tortillas
- grated American cheese
- Boil until tender, 1 large hen or fryer, debone chicken and save broth.
- Simmer in skillet with 3 tablespoons salad oil, chopped onion and green pepper; add can of Ro-Tel (tomatoes and chilies), chili powder, cumin, oregano and salt and pepper to taste.
- Separately mix together cream of chicken soup, mushroom soup and broth; add this to the sauce and mix well.
