Fish Florentine(Microwave)
- 1 (10 oz.) pkg. frozen, chopped spinach
- 4 oz. fresh mushrooms, sliced
- 1 lb. fish fillets
- 1 c. 1% milk
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1/2 tsp. tarragon leaves
- 2 Tbsp. low-fat margarine
- 1 Tbsp. lemon juice
- 1/4 c. Parmesan cheese
- paprika
- Microwave spinach in a 1 1/2-quart casserole for 5 to 6 minutes on High; drain.
- Layer mushrooms and fish over spinach. Combine milk, flour, salt and tarragon, mixing well.
- Add margarine.
- Microwave 2 to 3 minutes on High or until mixture boils and thickens.
- Stir in lemon juice.
- Pour mixture over fish. Sprinkle with cheese and paprika.
- Cover.
- Microwave 7 to 10 minutes on High or until fish flakes.
