Chopped Salad
- 8 cups finely chopped hearts of romaine lettuce (about 2 hearts)
- 1 1/3 cups chopped apple (1 large)
- 1 cup diced cooked chicken or turkey breast
- 3/4 cup chopped carrot
- 1/2 cup sliced green onions
- 1/2 cup frozen shelled edamame (green soybeans), thawed
- 1/2 cup candied pecans, chopped
- 4 ounces crumbled goat cheese (about 1 cup)
- Combine first 6 ingredients in a large bowl. Drizzle with Apple Cider Vinaigrette; toss well. Sprinkle with pecans and goat cheese.
