Ironstone Dressing
- 1/4 c. margarine
- 1/4 c. flour
- 1 Tbsp. salt
- 1/2 tsp. white pepper
- 2 c. milk
- 1/2 lb. sharp Cheddar cheese, grated
- 1/2 c. salad oil
- 1/2 c. cider vinegar
- 1 tsp. Worcestershire sauce
- In medium saucepan, slowly heat margarine until melted; remove from heat.
- Add flour, salt, pepper and Worcestershire.
- Stir until smooth.
- Add milk, small portion at a time.
- Bring to boil over medium heat, stirring continually.
- Reduce heat and simmer.
- Add 1/2 pound Cheddar cheese.
- Continue to stir and simmer until cheese is completely melted.
- Remove and cool.
- When cheese sauce has cooled, add alternately portions of oil and vinegar while stirring. To add zest, add garlic clove or 1 tablespoon horseradish.
- Chill. Shake before using.
- Makes 1 quart.
- Also use on open-faced sandwiches or baked potato as topping.
