Rice And Black Bean Salad
- 1 (6.9 oz.) pkg. Rice-A-Roni chicken flavor, cooked as directed and cooled
- 1 (16 oz.) can black beans, drained and rinsed
- 1 medium red bell pepper, chopped finely
- 1 medium green pepper, chopped finely
- 4 green onions, chopped
- 1/4 c. minced fresh cilantro
- 1/3 c. peanut oil
- 1/4 c. fresh lime juice
- salt and pepper
- Combine the first 6 ingredients in large bowl.
- Whisk together oil and lime juice in small bowl.
- Pour over rice mixture; toss to coat.
- Season with salt and pepper.
- Line large bowl with lettuce; mound salad in bowl.
- Garnish with sliced avocado and papaya and serve.
- (Should be made several hours ahead or refrigerated overnight for best flavor.)
