Rice And Black Bean Salad

  1. Combine the first 6 ingredients in large bowl.
  2. Whisk together oil and lime juice in small bowl.
  3. Pour over rice mixture; toss to coat.
  4. Season with salt and pepper.
  5. Line large bowl with lettuce; mound salad in bowl.
  6. Garnish with sliced avocado and papaya and serve.
  7. (Should be made several hours ahead or refrigerated overnight for best flavor.)
