Iced Banana Cakes
- Vegetable cooking spray
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 cup sugar
- 1/4 teaspoon ground cinnamon
- 3 tablespoons frozen egg substitute, thawed
- 1 tablespoon water
- 1 1/2 teaspoons vegetable oil
- 1 teaspoon vanilla extract
- 1/4 cup mashed ripe banana (about 1/2 small banana)
- 2 tablespoons sifted powdered sugar
- 2 teaspoons Neufcha@Gtel cheese, softened
- 1/4 teaspoon skim milk
- Coat 2 (4- x 2 1/2- x 1 1/4-inch) loafpans with cooking spray; set aside.
- Combine flour and next 3 ingredients in a bowl. Combine egg substitute, water, oil, and vanilla, stirring well with a wire whisk. Stir in banana. Add banana mixture to dry ingredients, stirring just until dry ingredients are moistened. Spoon batter into prepared pans. Bake at 350u0b0 for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes; remove from pans. Let cool completely on a wire rack.
- Combine powdered sugar, Neufcha@Gtel cheese, and milk, stirring well. Spread evenly over tops of cakes.
