Tuna Fiesta Soft Tacos
- 1/3 c. mayonnaise
- 1/2 tsp. garlic salt
- 1/2 tsp. lemon pepper seasoning
- 1 (6 oz.) can StarKist solid white chunk light tuna, drained and flaked
- 1/4 c. chopped celery
- 1 hard-cooked egg, chopped
- 2 Tbsp. finely chopped green onions
- 2 Tbsp. finely chopped green bell pepper
- 1 Tbsp. drained, chopped pimiento
- 6 flour tortillas (6-inch)
- 1 c. shredded lettuce
- 1/2 c. shredded Colby or Monterey Jack cheese
- salsa (optional)
- In large bowl, combine mayo, garlic salt, lemon pepper, tuna, celery, egg, onion, bell pepper and pimiento.
- Mix thoroughly. Place generous 1/2 cup filling on one side of each tortilla.
- Top with lettuce and cheese.
- Fold tortillas over; serve with salsa, if desired.
- Makes 6 servings.
