Jiffy Coconut Banana Pudding
- 1 large box vanilla pudding
- 48 vanilla wafers
- 7 bananas, sliced
- 2 egg whites
- 1/4 c. sugar
- 1 tsp. vanilla flavoring
- 1 bag coconut flakes
- Prepare your pudding mix according to directions on the box. Arrange the vanilla wafers in a baking dish.
- Layer your bananas. Pour the pudding on top of the mixture.
- Then repeat the process again.
- Keep doing this until you alternate the ingredients and it's used up.
- Beat egg whites until foamy.
- Add sugar and vanilla flavoring.
- Beat the egg whites until stiff peaks form.
- Then spread the meringue over the pudding.
- Bake at 425u0b0 until the meringue is lightly browned.
- Then take out of oven.
- Add coconut flakes.
- Put back in oven for about 5 minutes.
- Take out of oven. Cool for about 10 minutes.
