Veal, Prosciutto And Parmesan Rolls
- 1 minced onion
- 1 lb. ground veal
- 2 Tbsp. freshly grated Parmesan cheese
- 2 Tbsp. dried currants
- 1/4 c. minced fresh parsley
- 1/4 grated nutmeg
- 2 Tbsp. unsalted butter
- 1/4 lb. Prosciutto, chopped fine
- 2 Tbsp. pine nuts, toasted lightly
- 1/2 tsp. dried oregano
- 50 wonton wrappers
- 1 egg and 1 Tbsp. water
- Saute onion in butter until softened.
- Add the veal; cook for 3 minutes, or until veal is no longer pink.
- Transfer mixture to a bowl with a slotted spoon and add the Prosciutto, Parmesan, pine nuts, currants and spices with salt and pepper to taste.
- Wrap in wontons and seal with a wash of one egg and 1 tablespoon water. Deep fry in vegetable oil.
- Makes 50.
