Chinese Pineapple Chicken

  1. Brown chicken in vegetable oil and salt.
  2. Add garlic, chopped onion and ginger; saute.
  3. Drain pineapple; save juice.
  4. Mix 1/4 cup juice and cornstarch.
  5. Mix remaining juice with chicken broth, soy sauce, honey and cinnamon.
  6. Pour over chicken.
  7. Simmer for 30 minutes, covered, until chicken is tender.
  8. Stir cornstarch mixture in and cook until thickened.
  9. Add pineapple.
