Chinese Pineapple Chicken
- 4 chicken breasts
- 1 Tbsp. vegetable oil
- salt
- 1 large garlic, pressed and minced
- 1/2 c. chopped onion
- 1 tsp. ground ginger
- 1 (20 oz.) can pineapple slices (save all juice)
- 1/4 c. juice from can of pineapple
- 2 Tbsp. cornstarch
- 1/2 c. chicken broth
- 1/4 c. soy sauce
- 2 Tbsp. honey
- 1/2 tsp. cinnamon
- Brown chicken in vegetable oil and salt.
- Add garlic, chopped onion and ginger; saute.
- Drain pineapple; save juice.
- Mix 1/4 cup juice and cornstarch.
- Mix remaining juice with chicken broth, soy sauce, honey and cinnamon.
- Pour over chicken.
- Simmer for 30 minutes, covered, until chicken is tender.
- Stir cornstarch mixture in and cook until thickened.
- Add pineapple.
