Pork Tomato Sauce
- 1 tablespoon olive oil
- 1 small onion, chopped
- 1/2 pound boneless pork, cut into 1/2-to 1-inch cubes
- 1 tablespoon chopped fresh sage, or 1 tsp dried
- 1 tablespoon chopped fresh thyme, or 1 tsp dried
- Salt and freshly ground pepper
- 1/2 cup low-sodium chicken broth
- 1 cup tomato sauce
- 1 cup frozen peas
- Prep time: About 10 Minutes
- Cooking time: About 25 Minutes
- In a medium saucepan, heat oil over moderate heat. Add onions and cook 5 minutes, stirring frequently. Add pork and brown about 4 minutes (if it's already cooked, add with the tomato sauce; see below). Stir in herbs, salt, and pepper and cook 5 minutes. Pour in chicken broth and tomato sauce and simmer 5 minutes. Add peas, taste for seasoning, and let cook another 5 minutes, or until the pork and peas are tender.
- FREEZE-EASY: Place cooled sauce in zip-close plastic bags or containers with tight-fitting lids. After thawing, reheat in a saucepan over low heat until simmering; or follow your microwave's directions.
