Apple Pie Nachos
- 4 thick-cut bacon slices
- 1 cup coarsely chopped pecans
- 1 tablespoon salted butter, melted
- 1/2 teaspoon kosher salt, divided
- 1/4 cup sweetened dried cranberries
- 2 tablespoons (1 oz.) bourbon
- 2 large Granny Smith apples, peeled and thinly sliced (1 lb. total)
- 2 tablespoons light brown sugar
- 2 (7 1/3-oz.) bags cinnamon sugar pita chips
- 4 ounces sharp Cheddar cheese, shredded (about 1 cup)
- Preheat oven to 350u0b0F. Cook bacon in a large skillet over medium until browned and crisp, 8 to 10 minutes; transfer to paper towels to drain. Crumble bacon, and set aside. Reserve 2 tablespoons bacon drippings in skillet.
- Place cranberries in a small microwavable bowl, and stir in bourbon. Microwave on HIGH until hot, 20 to 30 seconds. Let stand until cool; drain, and pat dry with paper towels.
- Heat reserved 2 tablespoons bacon drippings over medium-high; add apples and brown sugar, and cook, stirring often, until apples have softened and turned golden, 10 to 12 minutes. Sprinkle with remaining 1/4 teaspoon salt.
- Increase oven temperature to broil. Place pita chips on an oven safe platter or tray. Spoon apples evenly over chips, and sprinkle evenly with cheese. Broil until cheese is melted and just beginning to brown, 2 to 3 minutes. Remove from oven; sprinkle with bacon, pecans, and cranberries. Serve immediately.
