Skillet Casserole
- 1 lb. ground beef or turkey
- 1 onion, chopped (1/2 to 3/4 c.)
- 1 (14 oz.) can tomatoes, chunked
- 1 (4 oz.) can mushroom stems and pieces
- 3/4 c. elbow macaroni
- 1/4 tsp. chili powder
- 1 tsp. garlic salt
- 1/2 c. shredded Cheddar cheese or to taste
- Brown crumbled meat; drain grease.
- Add onion, tomatoes with liquid, mushrooms with liquid and macaroni.
- Heat to boiling. Reduce heat to low; cover and cook 20 to 30 minutes, stirring often, until macaroni is done and most of liquid is absorbed.
- If needed, water may be added to keep mixture moist.
- Stir in chili powder, garlic powder and sprinkle with cheese.
- Cover only long enough to melt cheese.
- Serve in skillet.
- Crusty bread and green salad complete this quick meal.
