Cheesy Beefy Cornbread
- 1 Tbsp. cornmeal
- 1/2 lb. ground beef, browned and drained
- 3/4 tsp. salt
- 1 c. milk
- 1 can cream-style corn
- 1/4 c. chopped onion
- 2 c. Cheddar cheese
- 1 c. yellow corn meal
- 1/2 tsp. soda
- 2 eggs, beaten
- 1/4 c. vegetable oil
- 2 to 4 jalapeno peppers, chopped
- Sprinkle 1 tablespoon cornmeal in bottom of a well-greased skillet.
- Cook over medium heat until cornmeal is lightly browned. Set skillet aside.
- Combine cornmeal, salt and soda.
- Add milk, corn, eggs and oil.
- Mix well.
- Pour half of batter in skillet. Sprinkle cheese, onion, peppers and ground beef which has already been cooked.
- Top with remaining batter.
- Bake 50 to 55 minutes at 350u0b0.
