Mashed Potato Cake
- 2 c. sugar
- 1 c. butter
- 4 egg yolks, beaten
- 1 c. sour cream
- 2 tsp. cocoa
- 1 c. mashed potatoes, cooled
- 1 tsp. ginger
- 1 tsp. vanilla
- 1 tsp. soda
- 1/2 tsp. salt
- 1 c. nuts, chopped (pecans or walnuts)
- 1 c. raisins
- 1 c. apples, diced
- 2 1/2 c. flour
- stiffly beaten egg whites
- Cream together sugar, butter and egg yolks.
- Add sour cream, cocoa and mashed potatoes.
- Beat in ginger, vanilla, soda and salt. Blend in nuts, raisins and apples.
- Add flour, mixing slowly.
- Beat egg whites until stiff and gently fold in.
- Bake in tube pan or can bake in coffee cans and cut in half when done to look like logs. Ice with coffee icing.
