Hoisin Chicken And Broccoli Stir-Fry
- 1 tablespoon vegetable oil
- Cooking spray
- 1/3 cup fat-free, less-sodium chicken broth
- 3 tablespoons hoisin sauce
- 2 tablespoons dry sherry
- 2 tablespoons orange juice
- 1 teaspoon cornstarch
- 2 teaspoons bottled minced garlic
- 2 teaspoons bottled minced fresh ginger
- 1/2 teaspoon sesame oil
- 1 pound chicken breast tenders
- 3 cups bagged broccoli florets
- 1 (8-ounce) can whole water chestnuts, drained
- Heat vegetable oil in a large nonstick skillet coated with cooking spray over medium-high heat. Combine broth and the next 7 ingredients (broth through sesame oil). Add chicken to pan, and saute 2 minutes. Add broccoli, and saute 5 minutes. Add chestnuts, and saute 2 minutes. Add broth mixture, and cook 1 1/2 minutes or until sauce is slightly thick, stirring constantly.
