Orzo And Vegetables
- 1 c. orzo
- 4 c. cut up broccoli flowerets (1 bunch)
- 1/2 c. coarsely chopped, drained, marinated artichoke hearts
- 1 (6 oz.) can ripe olives, drained and coarsely chopped
- 2 medium tomatoes, chopped
- 2 scallions, chopped
- 2 Tbsp. olive oil
- 3 Tbsp. red wine vinegar
- 1/4 tsp. garlic salt
- 1/4 tsp. pepper
- 1 c. diced cooked chicken
- 6 to 7 c. mixed salad greens
- In a large pot of boiling salted water, cook orzo over medium-high heat 6 minutes.
- Add broccoli to pot and cook 4 to 5 minutes longer, until broccoli and orzo are tender.
- Drain well. Add artichoke hearts, olives, tomatoes, scallions, oil, vinegar, garlic salt, pepper and chicken to pot, tossing well.
- Serve immediately on mixed salad greens.
