Creamy Almond-Caper Sauce

  1. Place almonds in a single layer in a dry skillet, and turn heat to medium. Toast for about 2 minutes, stirring occasionally. Melt the butter in a medium skillet over medium heat. Add the scallions, capers and garlic, and cook, stirring constantly, 1 to 2 minutes or until scallions are softened but retain their bright green color.
  2. Transfer mixture to a medium bowl and cool slightly. Stir in sour cream, almonds, cilantro, lime juice, lime zest and cayenne.
