Chicken-Okra Gumbo(Cajun Style)
- 2 1/2 to 3 lb. chicken
- 3 Tbsp. oil
- 3 lb. okra, sliced
- 1 medium onion, chopped
- 1 medium bell pepper, chopped
- 1 c. celery, chopped
- 2 Tbsp. gumbo file
- 2 c. rice
- 4 c. water
- salt and pepper to taste
- Cook rice in 4 cups of water.
- Set aside.
- Boil chicken in 10 or 12-quart soup pot until chicken is done.
- Remove chicken and debone.
- Return chicken to pot.
- In another pot, put 3 tablespoons oil, sliced okra, onion, bell pepper and celery.
- Cook until smothered down, stirring constantly.
- When done, add to the chicken and broth, stirring constantly.
- Watch closely as it will boil over if not stirred constantly.
- Simmer about 2 hours.
- When almost done, add gumbo file.
- Season to taste with salt and pepper.
- Serve in soup bowl over rice.
