Eggplant Upside Down Pie
- 1 1/2 tsp. olive oil
- 3 Tbsp. bread crumbs
- 1 lb. eggplant, cut in 1/4-inch slices
- 1/4 c. oil
- 1 c. long grain rice
- 1/2 lb. sweet Italian sausage (bulk)
- 1/4 c. chopped onion
- 2 cloves garlic, minced
- 1 egg, slightly beaten
- 3 Tbsp. tomato paste
- 1 tsp. oregano
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. shredded Provolone cheese
- 1/2 c. shredded Mozzarella cheese
- Preheat broiler.
- Grease bottom and sides of 10-inch pie plate with 1 1/2 teaspoon olive oil.
- Dust with bread crumbs.
- Place eggplant on a baking sheet; brush both sides with 1/4 cup oil. Broil about 5 minutes or until lightly browned on both sides. Reduce oven to 350u0b0.
- Cook rice following package directions. Salt.
- Drain excess liquid.
- Reserve rice.
