Eggplant Upside Down Pie

  1. Preheat broiler.
  2. Grease bottom and sides of 10-inch pie plate with 1 1/2 teaspoon olive oil.
  3. Dust with bread crumbs.
  4. Place eggplant on a baking sheet; brush both sides with 1/4 cup oil. Broil about 5 minutes or until lightly browned on both sides. Reduce oven to 350u0b0.
  5. Cook rice following package directions. Salt.
  6. Drain excess liquid.
  7. Reserve rice.
