Apple Raisin Bran Muffins
- 2 c. Nabisco 100% Bran cereal
- 1 1/4 c. Dannon nonfat or low-fat plain yogurt
- 1/2 c. skim milk
- 1/4 c. Fleischmann's margarine, melted
- 1/4 c. Egg Beaters
- 1 c. all-purpose flour
- 1/3 c. firmly packed light brown sugar
- 1/2 c. chopped apple
- 1/2 c. seedless raisins
- 1 Tbsp. baking powder
- 1 tsp. ground cinnamon
- Mix cereal, Dannon nonfat or low-fat yogurt, milk, margarine and egg product; let stand for 5 minutes.
- In a bowl, blend flour, sugar, baking powder and cinnamon.
- Stir in bran mixture just until blended.
- Stir in apples and raisins.
- Spoon batter into 12 greased 2 1/2-inch muffin pan cups.
- Bake at 400u0b0 for 22 minutes or until done.
- Serve warm.
- Makes 1 dozen.
