Black Beans And Rice
- 1 (14.5 oz.) can black beans
- 1 c. rice (uncooked)
- 1 (14.5 oz.) can petite cut diced tomatoes (Mexican flavor)
- 1 small onion finely chopped
- 1 green pepper chopped (or sweet red pepper)
- 2 stalks celery chopped
- 1 clove garlic minced or pressed
- 1 Tbsp. olive oil
- 3/4 c. cheddar or jack cheese, shredded
- Optional- chopped green chilies or jalapenos
- Cook rice according to package instructions.
- Rinse black beans in a colander.
- Saute onion until soft in olive oil.
- Add celery and red or green pepper and garlic.
- Cook only until slightly soft.
- Add cooked rice, tomatoes, black beans and any optional ingredients desired.
- Put into casserole dish, sprinkle with cheese.
- Heat in oven or microwave until cheese is melted. This is a great side dish or terrific filling for burritos.
- Just add salsa, lettuce, tomato and sour cream.
