Black Beans And Rice

  1. Cook rice according to package instructions.
  2. Rinse black beans in a colander.
  3. Saute onion until soft in olive oil.
  4. Add celery and red or green pepper and garlic.
  5. Cook only until slightly soft.
  6. Add cooked rice, tomatoes, black beans and any optional ingredients desired.
  7. Put into casserole dish, sprinkle with cheese.
  8. Heat in oven or microwave until cheese is melted. This is a great side dish or terrific filling for burritos.
  9. Just add salsa, lettuce, tomato and sour cream.
