Kitchree
- 1 c. raw rice
- 1/2 c. red lentils
- 1 c. cauliflowerets
- 1 onion, chopped
- 2 cloves garlic, chopped
- 1/2-inch piece ginger, chopped
- 1/2-inch piece green chili, cut
- 1/2-inch piece cinnamon stick
- 1 tsp. cumin seed
- 1 tsp. mustard seed
- 1/4 tsp. turmeric
- butter and salt to taste
- 2 c. water, plus
- Soak lentils for 1/2 hour.
- Fry mustard seed in some oil until they jump.
- Add cumin, chili, garlic, ginger, onion and cinnamon stick; cook for a few minutes.
- Add turmeric and cauliflower. Cook for 10 minutes.
- Add drained lentils and some butter; stir and add rice and water.
- Simmer, covered, until cooked. Additional water may need to be added.
- When almost done, add salt and cook a little longer.
- May add a tablespoon of lemon juice and some green coriander and sweetened coconut at the end.
