Apple Raisin Bran Muffins
- 2 c. whole wheat flour
- 1/2 c. wheat germ
- 1/2 tsp. ground nutmeg
- 1 c. buttermilk or yogurt
- 1 Tbsp. grated orange rind
- 1/2 c. raisins
- 1 c. wheat bran
- 1 1/2 tsp. baking soda
- 1/2 c. orange juice
- 1 egg, beaten
- 1/4 c. safflower oil
- 1 c. finely chopped apple
- 1/2 c. sunflower seeds
- In a large bowl mix the flour, bran, wheat germ, baking soda and nutmeg.
- In a medium bowl combine orange juice, buttermilk or yogurt, egg, molasses, syrup and oil.
- Stir into dry ingredients and blend well.
- Stir in orange rind, apple, raisins and sunflower seeds.
- Spoon mixture into prepared muffin tins 2/3 full.
- Bake for 20 minutes.
- Makes 24 muffins.
- Bake at 350u0b0.
