Banana Squares

  1. In a small mixing bowl beat egg whites until soft peaks form; set aside.
  2. In a large mixing bowl cream shortening and sugar. Beat in egg yolks; mix well.
  3. Add bananas.
  4. Combine flour and baking soda; add to creamed mixture alternately with milk, beating well after each addition.
  5. Add vanilla.
  6. Fold in egg whites.
  7. Fold in nuts if desired.
  8. Pour into a greased 13 x 9 x 2-inch baking pan.
  9. Bake at 350u0b0 for 45 to 50 minutes.
  10. Cool on a wire rack.
  11. If desired, garnish with a dollop of whipped cream and a few banana slices.
  12. Yield:
  13. 12 to 16 servings.
